Mrs. Moses has been an American citizen for almost a quarter of a century, but she still bakes and cooks many of the dishes she remembers from her home country.

Thanks to modern freezers, there is a never-ending supply on hand. Eating is a social amenity in the homes of these Middle Eastern People. A Basic Recipe Mrs. Moses, like many of her friends, has no written recipes, but she figured the proportions for a basic stuffing which she uses in many different ways. Here is the stuffing recipe: 2 lb.

ground lamb (lean) cup rice 2 cups canned tomatoes 2 teaspoons salt 1 teaspoon pepper 1 teaspoon garlic, chopped mint, fresh or dried, Mix well. Zucchini squash is one of the vegetables in which the stuffing is used. The long cucumber shaped squash is hollowed out with a special tool called a munara. Some type of vegetable peeler, could be used. Pack the stuffing loosely in the zucchini.

Add cups of tomato and cook over low heat about hours. Cabbage rolls are made with the same stuffing, the cabbage leaves being steamed first to make them pliable. Grape leaves are another favorite to use stuffed. Each kind of vegetable or leaves adds its special flavor to the basic stuffing. Only Lamb Used Lamb is the meat generally used in Lebanese cookery.

Another lamb recipe often used is This is made with lamb with all fat removed, a special wheat, (obtainable in stores that specialize in foreign and imported foods), onions, salt and pepper. The proportions are about five pounds of lamb and one pound of wheat. The ingredients are mixed and ground twice. It 'is served raw. Kibbi is also sometimes used in a loaf.

A layer of kibbi is placed in a baking dish. Over this is placed a layer of stuffing made with ground lamb, pine nuts and onion, which are mixed and browned. Another layer of kibbi cut in diamond shape on top, buttered and baked. Stuffing is also used wrapped in raised dough and baked. Yogurt is sometimes added.

Eggplant, sliced inch thick, placed in layers with stuffing, covered with tomatoes and baked. This is served with rice. 'Weeds' Valuable Beans are another popular vegetable. Kidney beans, or other varieties, or okra are cooked with meat and tomato sauce and served with rice. Lentils, a member of the pea family, as well as chick peas, are cooked with lots of water, about a pound of lentils in two quarts of water.

Onions, browned in oil are poured over the lentils, known as Mzhadura. One half cup of rice or wheat is added to thicken it a little. This special wheat is also cooked with meat and served with yogurt. Mrs. Moses could give lessons in survival.
